* 花膠是以魚鰾製成的乾貨,花膠片即指將花膠筒切開成片處理。非洲花膠片少白塊,乾淨無腥。花膠片多用於原隻上碟作花膠扒菜式,既美觀又經濟,因此亦有不少酒樓以花膠片入饌以供宴席之用。除宴席外,因花膠含豐富蛋白質,因此不少懷孕女士於懷孕中、後期以之進補,深受女士歡迎。

食療價值 : 

* 花膠含豐富蛋白質,可滋陰、固腎,有助人體消除疲勞,對外科手術後的傷口恢復有幫助。

煮食方法 : 

* 在浸法花膠過程中切忌接觸油份。先把花膠洗淨,燒滾水後熄火放進花膠,焗至水凍。再用清水浸一天, 需放進雪櫃,早晚換水。重覆做直至花膠軟身。燒水加入已經發透的花膠以及薑汁滾2分鐘來消除腥味,然後倒去薑水。 用清水再滾透(除去薑味)備用。

保存方式: 

* 存於通風陰涼處,如需較長時間食用,封好存於0-8℃雪櫃為佳。

Description:

* Fish maws are dried from fish's air bladders. Sliced from Grass Fish Maw, the fish maw pieces have fewer white blocks and less fishy in scent. Fish maws pieces are served as whole, it's budget-friendly and pleasing in appearance, commonly used by Chinese restaurant for banquet. High in protein level, pregnant mothers love to consume fish maws for nourishment.

Nutritive Value:

* Fish Maw is high in protein level, nourishing, tonifying kidney and can dissipate fatigue. It can also speed up the recovery process after surgery.

Cooking Method:

* There should not be any trace of grease or oil in the preparation process. After cleansing the fish maws, boil a pot of hot water. Once it reaches boiling point, turn off the stove and place in the fish maws and leave them in the covered pot until the water cools down. After taking the fish maw out, soak them in water for a day and place them inside the refrigerator. Change the water twice a day. Repeat the whole procedure until the fish maws soften. Afterwards, take out the softened fish maws. Boil them with water and ginger extract for roughly 2 minutes to remove the fishy scent. Remove them from heat and soak in water to remove the ginger scent and it's ready to use.

* Store in cool and dry place. For longer preservation, suggested to sealed and chilled at 0-8
